What is a balance bar?

 

I don't really know as I literally made up the name cause the alliteration sounded cool. It's basically the bar form of a bliss ball. What's a bliss ball you might ask? A nutrient dense healthy treat thing that you find at the till at most health shops.

 

Moving on.

 

A little background on these (cause you all know I love a good story). So I want to include more vegan sources of protein into my diet and baking, but I just find most of the options really high carb, and often really high fat too. The amount of sugar in some of those raw bars you get, or "healthy date balls", is seriously frightening! So I decided to take matters into my own lil hands and make my own. And so that's how these raw, vegan balance bars were born. PERFECTLY balanced macros, low sugar, filled with fiber and micronutrients, and completely delicious. They're basically berry chocolate brownies. Okay okay max so GIVE US THE DAMN RECIPE ALREADY.

Wet
 100 g finely grated zucchini
 150 g finely grated carrot
 50 ml honey/maple syrup/xylitol syrup
 15 g nut butter
 60 ml almond milk
Dry
 25 g raw cacao powder
 25 g desiccated coconut
 5 g coconut flour
 20 g ground flaxseeds
 30 g raw hemp powder
 65 g vegan protein (I used @phytopro Chocolate)
 30 g dried gogi berries (can sub cranberries)
 ¼ tsp pink salt
 ½ tsp cinnamon
Other
 chocolate
 desiccated coconut

Combine all the dry ingredients in a bowl.

Finely grate carrots and zucchini. Add to dry mix.

Blend/combine remaining wet ingredients and add to dry mix. You might need to use your hands to combine the mixture. Add a dash more nut butter or syrup if it's too dry but not too much!

Press into a lined pan/dish. Top with whatever you like. I used crushed spelt flakes, coconut and raw choc. Alternatively, roll into bliss balls. Refrigerate for 4 hours. Slice, eat and freeze the rest. I just eat mine straight out the freezer and they're perfect just like that. Alternatively, leave out for 10 minutes to defrost before eating.
