Who doesn't love granola? Cause you can just leave rn.

But this is my favourite thing just in CLUSTER from aka bite size morsels of happiness. I love dried berries once they're baked (caramelised, extra chewy little speckles of greatness) so I went with a cranberry and cinnamon combo. You could go wild though!
It is quick, easy, adaptable to whatever you have in your cupboard, and packs protein, fibre and crunch all in one. Fantastic!
PS - that is my current favourite word and people who throw around 'fantastic' in a sentence like it ain't nothing go right to the top of my 'most trusted' list.
Cranberry Granola Clusters
Preheat oven to 170 degrees.
Combine dry ingredients in a bowl and mix.
In a saucepan (or in the microwave) combine the coconut oil, sweetener and milk. Bring to the boil and allow to simmer for 2-3 minutes.
Pour wet mix into dry and ensure that granola is well and evenly coated. Add a small splash of milk if it's too dry. End product should be quite dry but slightly sticky.
Grease a baking tray and spread out mixture in a bit square/circle shape. Try and compact it. Bake for 20 mins (should be golden brown) before loosely breaking into chunks and spreading around the tray. Return to oven for 5-10 more minutes to get extra crispy. Remove and let cool before storing in an airtight container.
