Cinnamon & Bacon French Toast

French toast it one of the yummiest breakfasts ever, and lends itself to a million flavour combos.

In this mornings case in particular I was feeling warm, cinnamon flavours thanks to the cold weather outside, and I wanted to get some protein in with my meal as well.

Boom. Cinnamon and bacon it was. With hints of vanilla and almond too. Delish! The salty sweet combo is always a winner in my books.

To boost the protein I used egg whites in addition to whole eggs, and reduced fat bacon just so that they had a bit more protein in them. But you don't have to do this of course!

 2 slices of bread (I used sourdough)
 1 whole egg
 2 egg whites
 cooked bacon
 250 g steamed pumpkin
 cinnamon
 salt
 vanilla extract
 xylitol or sweetener of choice
 almond butter

Cook your bacon.

Beat the eggs, a pinch of salt, and a few drops of vanilla in a wide dish. Adding cinnamon or sweetener to this is optional.

Soak your bread in the mixture for a few seconds before cooking it over a medium heat on a greased pan.

Mash your steamed pumpkin, 1 tsp cinnamon, a few drops of vanilla, a pinch of salt and some sweetener in a bowl with a fork.

Put it all together! Layer your cooked French Toast with some pumpkin mash, bacon bits, a drizzle of almond butter and some bits of granola for a good crunch!

Adding ice cream would be an added bonus but I didn't have any!
