Vegan Freezer Protein Treats

Three layers of delicious, vegan protein goodness, stacked into a killer bar/square of sorts. The bottom layer is like a chickpea fudge, the middle layer is a rice crispy treat kind of thing, and the top is a creamy chocolate layer. This whole stack needs to be kept in the freezer, and then you can just pop out a square when you want one. I like them best when they're taken out the freezer and allowed to sit for like 5 minutes to allow the fudge to soften a little. YUM!

Chickpea fudge base
 120 g rinsed and drained chickpeas
 120 ml coconut milk
 40 g nut butter (3 tbsp)
 1 tsp vanilla extract
 1 pinch salt
 4 tbsp sticky sweetener of choice (like maple syrup or honey)
 20 g pea protein powder (vanilla)
 10 g coconut flour
Rice crispy treat middle
 20 g brown puffed rice
 2 tbsp xylitol
 25 g nut butter
 3 tbsp coconut milk
 10 g pea protein powder (vanilla)
Chocolate top
 1 tbsp cocoa powder
 15 g pea protein powder
 2 tbsp xylitol
 60 ml coconut milk
 15 g nut butter (1 tbsp)
Base:

Blend everything except the protein powder and coconut flour in a blender or food processor until smooth. Add coconut flour and blend again. Stir in protein powder.

Spoon into a greased/lined tray or loaf tin.

Place into the freezer while you prepare the next layer.

Middle:

Combine xylitol, nut butter, coconut milk and protein powder in a bowl and mix.

Microwave for 60 seconds, stirring every 20 seconds.

Add puffed rice to the mixture and stir quickly.

Remove fudge from freezer and smooth your middle layer over it.

Place back into freezer while you prepare final layer.

Top:

Combine all the ingredients well. Microwave for 60 seconds, stirring every 20 seconds.

Pour over top of your protein squares.

Place back into the freezer for 30 minutes.

Slice into squares.

Store in freezer. Remove a square 5 minutes before you'd like to eat it!
