17 Oct Lite Lemon Squares
I have been baking so many lemon flavoured things this past month. Maybe it's the tease of summer being just around the corner, or maybe it's just cause sweet lemon treats are so delish. Don't know, don't care!
These are called squares because they're exactly that. Not quite a cake but not quite a blondie. They're not dense enough to be blondies yet not light enough to be cake, so they fall somewhere in-between!
And they're 'lite' because they're actually super low calorie. This is cause they don't have any added fats and they're high in fiber. This wasn't planned but I'm not complaining cause they make the perfect preworkout snack. And the best part is you can munch the whole batch (okay 4/5 hahaha) if you like!
Lite Lemon Squares
Preheat oven to 180 degrees. Grease a loaf tin.
Combine dry ingredients in a bowl and mix.
Add wet ingredients to a blender and blend.
Pour wet ingredients into dry and mix. Add and extra flavours or sweeteners you'd like as you adjust to taste.
Pour into greased loaf tin. Bake at 180 degrees for 30-35 minutes.
