Simple Cauli Soup (Leek & Thyme edition)

I didn't even used to particularly like soups. I didn't mind them but they weren't on my meal radar. But lately I have been really enjoying using my old veg to make all sorts of tasty variations. They're so quick, really diverse, and super satisfying with a slice of buttery sourdough toast!

Cauliflower is an awesome veg to include in a soup cause it is really creamy! This is a simple cauli soup recipe I made using thyme and leek but you could totally change the flavours up!

Simple Cauli Soup (Leek & Thyme edition)

Yields1 Serving
 2 heads of cauliflower chopped up (about 1.2kg)
 1 tbsp butter
 1 tbsp garlic
 1 onion
 4 leeks (optional)
 thyme
 1 tsp mixed herbs
 1 cup milk of choice
 1 cup stock (1 sachet)
 seasoning
 1 tbsp xylitol (optional)
 chilli

Chop up your onion and leeks and brown in your butter and garlic on the stove for 3 mins. Add your cauli and thyme. Add seasoning and xylitol.

Fry for about 5 minutes before adding stock and milk. Put on a lid and simmer for 20 minutes before turning stove off. I just left mine in the pot for the day and blended it when I got back from work but you can blend it straight away using a hand blender. If you're using a nutribullet allow it to cool slightly.

Taste test! Adjust flavours as desired. Serve with some buttery sourdough toast!
