06 May Hot Chocolate Microwave Cake

What is better than cake? Cake that takes 5 minutes to whip up in the microwave!
What is better than hot chocolate? Hot chocolate you can eat by the spoonful.
So why not combine these two into a quick, nutritious, high protein meal that will completely satisfy any sweet tooth?
And add in some pumpkin cause #pumpkinislife?
Well that is exactly what I did and it turned out magically.
Hot Chocolate Microwave Cake
Yields1 Serving 120 g steamed pumpkin (can sub banana)
1 egg white
2 tbsp chickpeas
60 ml milk (1/4 cup)
15 g protein powder
2 tbsp hot chocolate powder (SF if desired)
1 tbsp coconut flour
1 tbsp nut/seed flour (almond flour)
1 tbsp oats/flour/buckwheat
¼ tsp salt
⅓ tsp baking powder
1 tbsp nut butter of choice
1 tbsp xylitol/maple syrup
sweetener drops (optional)
Optional add ins
Chopped strawberries
Choc chips
Nuts
1Blend all your ingredients together except your coconut flour and add ins.
2Add your coconut flour and blend again.
3Stir in add ins and transfer to a bowl.
4Microwave for 3 mins and 30 seconds.
