Chickpea Freezer Fudge (vegan)

I love fudge, and have such fond memories of making it in big pots with my granny when I was young. To test if it was ready we would drop blobs into cold water, and I loved nothing more than chewing on the toffee it made and scraping out the pot.

But alas. This is not that kind of fudge. Sometimes, there really is no substitute for the real thing. So if that's what you're craving, you should just do yourself a solid and make some!

However, this is delicious in its own right. Think of it as its own kind of dessert. Cold, creamy, fudgy and rich. Also, due to its ingredients, which are all completely wholesome, it definitely is a very healthy option, and to me, totally satisfying!

It contains probably my number one baking ingredient - chickpeas! Plus, it has the addition of pea protein and nut butter which makes for a staggering little hit of protein in the end result. Check it out, give it a try - it literally takes 5 minutes. And I love that you can grab a block or two whenever you're feeling like something sweet and rich, but no sooo sweet and rich that it might not your socks off, ya feel???

 80 g drained and rinsed tinned chickpeas
 50 g banana
 25 g pea protein powder (mine was vanilla flavoured) (can sub whey protein - then use 40g)
 35 g drippy nut butter of choice (I used almond)
 80 ml coconut milk
 40 ml maple syrup/sticky sweetener of choice/honey
 ¼ tsp salt
 2 tbsp buckwheat (optional, to sprinkle over for some crunch)
Optional flavour additions (mine were rose and almond flavoured)
 cinnamon
 1 tbsp rose water
 almond essence
 vanilla extract

Add all the ingredients except the protein powder to a blender and blend.

Stir in the protein powder. Check that the consistency is spoonable.

Spoon into an ice tray. I put freeze dried strawberries in the bottom of the ice tray first.

Sprinkle with buckwheat.

Pop into the freezer. Once frozen (probably 6 hours), enjoy!
