Carrot Cake Bliss Balls

So bliss balls are all the rage on every health foodies insta page and carrot cake is all the rage in my general life, so why it took me so long to combine these two, I'm not quite sure. I'm sure Easter weekend had something to do with it, because carrots, and bunnies, and bliss, and treats...

What is a bliss ball anyway? It is a bite-sized morsel of goodness! Made from a combination of nuts, seeds and fruits, and often superfoods too, they make a perfect snack or after dinner treat, are quick to make and easy to travel with. My carrot cake version is a little extra indulgent cause I have dipped them in raw cacao dark chocolate, but I just love that extra crunch that you get when you bite through the chocolate! If you don't want to do that, just roll them in some unsweetened cocoa powder. I keep mine in the freezer and just take one or two out when I want them. Also, I didn't put it in the recipe below, but I added fresh ginger to my balls for some extra spice.

 1 cup finely grated carrot (100g)
  cup desiccated coconut
 2 tbsp ground flaxseed (14g)
 2 tbsp almond butter (30g)
 2 tbsp chopped walnuts
 2 tbsp maple syrup/raw honey
 1 tsp lemon zest and a squeeze of lemon juice
 1 tsp ground ginger
 1 tsp cinnamon
 1 tsp vanilla extract
 1 tsp stevia (optional)
 dark chocolate for dipping

Add all the ingredients except the walnuts to a food processor and blend. Don't blend too long because you don't want a paste! You might need to scrape down the sides once of twice.

When you are happy with the consistency, add the walnuts and blend for a second or two more. Adding the walnuts in at the end is totally optional, I just prefer the bit of crunch they add to the balls!

Roll into balls and put in the freezer for 15 minutes.

In the meantime melt the chocolate over a double boiler.

Dip the balls in the chocolate and roll in some more desiccated coconut if desired. Store in the fridge for up to three days, otherwise keep in the freezer.
