Bacon & Broccoli Salad

For some reason I hardly ever post savoury recipes to the blog. I share them on Instagram all the time but never get around to adding them on here. This one is simply too easy and tasty not to!

It is a flavoursome salad, packed with micronutrients and fiber, and giving a good dose of protein as well. And it is just so unbelievably easy. Also, you can totally use whatever ingredients you have lying around to make it your own. So lets get into it! 

Bacon & Broccoli Salad

Salad stuff
 400 g raw broccoli
 200 g bacon (cooked and diced)
 200 g red cabbage (or coleslaw mix)
 6 gherkins
 1 sweetcorn
 1 round of feta
 4 tbsp chopped spring onion
Dressing
 5 tbsp yogurt or mayonnaise
 1 tsp mustard
 2 tbsp balsamic vinegar
 1 tbsp maple syrup/honey
 seasoning

Finely chop salad ingredients and combine in a bowl.

Mix together dressing ingredients.

Pour over salad, mix and serve!
