27 May Healthy Choc-Nut Banana Bread (sugar & gluten free)
I have been trying to perfect a healthy banana bread without protein powder in it for the longest time! All the recipes out there either contain too much refined flour, sugar or fat! So I wanted to find a happy medium.
If you have ever experimented with banana bread you will know how often you just end up with a dense, uncooked centre, a loaf that didn't rise nicely, or a bread that is just downright strange! Especially if you would like a blender to be involved.
Anyway, I honestly think I have cracked it. Only about 6 attempts later haha. This bread is moist and flavoursome, packed with goodness and fiber, and just completely wholesome.
Healthy Choc-Nut Banana Bread (sugar & gluten free)
Preheat the oven to 180 degrees celsius.
Add oats (if not already a flour) and sunflower seeds to blender and blitz a few times into a coarse flour.
Combine this with all the other dry ingredients in a bowl and mix well.
Add all the wet ingredients to the blender and blend briefly.
Pour the wet ingredients into the dry ingredients and mix. Don't over mix.
Stir in the pecans and any other add-ins you would like.
Pour into a greased loaf tin and bake for 45-50 minutes (knife will come out clean).
