Chickpea Freezer Fudge (vegan)

 80 g drained and rinsed tinned chickpeas
 50 g banana
 25 g pea protein powder (mine was vanilla flavoured) (can sub whey protein - then use 40g)
 35 g drippy nut butter of choice (I used almond)
 80 ml coconut milk
 40 ml maple syrup/sticky sweetener of choice/honey
 ¼ tsp salt
 2 tbsp buckwheat (optional, to sprinkle over for some crunch)
Optional flavour additions (mine were rose and almond flavoured)
 cinnamon
 1 tbsp rose water
 almond essence
 vanilla extract

Add all the ingredients except the protein powder to a blender and blend.

Stir in the protein powder. Check that the consistency is spoonable.

Spoon into an ice tray. I put freeze dried strawberries in the bottom of the ice tray first.

Sprinkle with buckwheat.

Pop into the freezer. Once frozen (probably 6 hours), enjoy!
